Make the thyme simple syrup
Bring 8 oz of water to a boil and add three big thyme sprigs. Reduce the heat to simmer and allow the thyme to steep for 5 minutes.
Strain the thyme out of the water, add 2 cups granulated sugar and whisk until dissolved.
Make the cocktail
Combine 1 oz gin, 1 oz Lo-Fi Dry Vermouth, ¾ oz lemon juice, ¾ oz thyme simple syrup, ½ oz Drizzle, and 1 oz egg white (white from 1 large egg) into a cocktail shaker.
Vigorously dry-shake (without ice).
Add ice to the cocktail shaker and shake until cooled.
Strain into cocktail glass and garnish with a sprig of thyme.
