Scallop Ceviche with Fish Sauce

Ingredients

½ pound scallops (dry U-10 scallops)

1 tablespoon lemon juice

1 tablespoon lime juice

1 tablespoon Drizzle

1 tablespoon fish sauce

1 teaspoon sugar

Salt

Freshly ground pepper

Garnish

Cucumber

Orange

Chives

Shallots

Dried chilis

Pat a ½ pound scallops dry and lightly season with salt and pepper

Combine 1 tablespoon lemon juice, 1 tablespoon lime juice, 1 tablespoon Drizzle, 1 tablespoon fish sauce, and 1 teaspoon sugar and stir

Arrange scallops on plate

Thinly slice cucumber, orange, shallots, chives, and dried chilis

Sprinkle garnishes over scallops
