Friend of Graza: Shanika Hillocks

The mind and curator behind 'Let's Eat' takes us through her favorite pop-up reservations, the drink we all need to add to our Fall grocery list and the restaurant scene in Portland.

Q: How do you describe yourself?

S: I would describe myself as a caring human with a zest for life. When I love, I love hard. Whether it's a project, new friendship, romantic partner, or creative endeavor, I'm all in. I'm inspired by nature, people, travel, and of course food-ways.

Q: Finish this sentence, cooking for me is...

S: Nourishment, an act of meditation, and love.

Q: Your Apple Maps Guide 'Let's Eat' has some of the best spots in NYC, what are some of the newest additions that you're most excited about?

S: I'm excited about Kellogg's Diner, a 96-year-old Williamsburg staple that closed last year, and just reopened with Jackie Carnesi and her team at the helm. The menu touts Tex-Mex delights like tall nachos and comfort foods like meatloaf and fried pickles, which just screams fun! I look forward to bringing a group of friends this fall.

Q: If you could write another Let's Eat for a different city, which city would you choose?

S: Portland, Oregon. I visited for the first time last year with very loose restaurant plans, which is very unlike me, and every place I dined in was phenomenal. I'd love to go back and explore with fresh eyes.

Q: Something we can always find in your kitchen?

S: Fresh lemons, fish sauce, and Chief curry powder.

Q: Who are some chefs and figures in the culinary world that inspire you?

S: Norma Listman and Saqib Keval, the dynamic duo behind Masala y Maiz and Marigold in Mexico City. I admire their partnership, their politics, and how they've built a supportive system for their teams. I'm also inspired by my dear friend Osayi Endolyn who is an amazing writer, producer, and storyteller.

Q: We consider you an NYC pop-up connoisseur, are there any pop-ups or aspects of them that stick with you? What details, bites, and or venues have you loved?

S: Any time I can snag a pop-up reservation from Ha's Đặc Biệt or Chakriya of Kreung Cambodia I'm there. I am also such a fan of anything Magdalena O'Neal touches. Lana Lagomarsini pop-ups are also incredible. And finally, on dessert, if you haven't experienced Jennah KaiKai's cakes, you're missing out.

Q: Is there a fall wine or bottle you'd recommend as we venture into soup season?

S: Ghia recently launched their Le Fizz, which has beautiful notes of orange blossom, a note that will pair well with fall produce and delicious soups.

Q: What mottos, words of wisdom, or inspiration do you live by?

S: What's for you, will not miss you.

Q: Is there a hard-to-get NYC reservation you're currently eyeing?

S: My short list desired dines that I'm eager to check out before the holiday season approaches include Mắm, Penny, and Hamido Seafood

Q: What's on the horizon for you?

S: I've carved out some time for intentional rest, hosting friends at home, and annual Thanksgiving trip with my cousins.
