Arugula Pistachio Pistou

This easy and blendable arugula and pistachio upgrade of pistou sauce (think pesto, minus the pine nuts) is delicious AND doesn't contain any cheese. That means in just two steps you're looking at vegan-friendly pizza pies on your horizon.

1 cup pistachios

1 bunch green onion (green parts trimmed)

4-6 cups fresh arugula, torn

Juice of 1½ lemons

Zest of 1 lemon

¼ cup chives

½ - ¾ cup Drizzle


Active Time: 5 minutes

Full Time: 5 minutes

Serves 1

In the bowl of a food processor fitted with the metal blade attachment, blend together the pistachios, trimmed green onions, arugula, chives, lemon zest and lemon juice until a chunky green mixture forms.


Blend in your Drizzle until a creamy, rich and rather smooth pistou forms.


Transfer the pistou to an airtight container and store in the fridge until ready to serve, or until you transport to your campsite!
