Arugula Pistachio Pistou

This easy and blendable arugula-pistachio upgrade of pistou sauce (like pesto, minus the pine nuts) doesn't contain any cheese. Meaning in just two steps there could be vegan-friendly pies on your horizon.


1 cup pistachios

1 bunch green onion (green parts trimmed)

4-6 cups fresh arugula, torn

Juice of 1.5 lemons

Zest of one lemon

1/4 cup chives

1/2-3/4 cup Drizzle


Active Time: 5 minutes

Full Time: 5 minutes

Serves 1

In the bowl of a food processor fitted with the metal blade attachment, blend together the pistachios, trimmed green onions, arugula, chives, lemon zest and lemon juice until a chunky green mixture forms. Blend in your Drizzle until a creamy, rich and rather smooth pistou forms.


Transfer the pistou to an airtight container and store in the fridge until ready to serve, or until you transport to your campsite!
