8 large eggs
2 Tbsp mayo
2 ½ tsp sweet relish
1 ½ tsp Dijon mustard (divided)
1 ½ tsp yellow mustard (divided)
Kosher salt + black pepper
½ cup flour
½ cup cracker crumbs (crushed fine)
½ cup panko breadcrumbs
¼ tsp garlic powder
½ tsp dried parsley Pinch of cayenne (optional)
Frizzle (or another olive oil) for brushing
Paprika Dill
Drizzle for finishing
Instructions
Active Time: 15 Minutes
Full Time: 30 Minutes
Place 6 eggs (in their shells!) directly into your air fryer. Cook at 250°F for 17 minutes. Move them straight into an ice bath and chill until they’re easy to peel.
Slice each egg in half and scoop the yolks into a bowl. Add mayo, relish, 1 tsp Dijon, and 1 tsp yellow mustard. Mash until smooth and season with salt and pepper. Spoon into a piping bag or plastic bag with the corner snipped and refrigerate.
Grab three shallow bowls and in them put: Flour, 2 remaining eggs, lightly beaten with ½ tsp Dijon, ½ tsp yellow mustard, salt + pepper, A mix of Ritz, panko, garlic powder, parsley, cayenne (if using), salt + pepper
Take each empty egg white, dip it in the flour, then the egg wash, then into the crumb mixture. Press gently so it sticks. Place on a tray and brush both sides with Frizzle.
Brush or drizzle Frizzle onto the air fryer basket so nothing sticks. Arrange the breaded egg whites in a single layer (don’t crowd!) and cook at 390°F for 8–10 minutes, flipping halfway through, until crispy and golden.
Pipe the yolk mixture into the crispy egg whites. Finish with a dash of paprika, dill, a squeeze of Drizzle and enjoy!
