Scallop Ceviche with Fish Sauce
This one's for the ceviche lovers out there... Drizzle and raw scallops, with bright bursts of orange citrus and fish sauce umami flavor, are the GOAT combo you never knew you were missing.

½ lb scallops (dry U-10 scallops)
1 tbsp lemon juice
1 tbsp lime juice
1 tbsp Drizzle
1 tbsp fish sauce
1 tsp sugar
Freshly ground pepper
Active Time: 10 minutes
Full Time: 10 minutes
Pat a ½ lb of scallops dry and lightly season with salt and pepper.
Combine 1 tbsp lemon juice, 1 tbsp lime juice, 1 tbsp Drizzle, 1 tbsp fish sauce, and 1 tsp sugar and stir.
Thinly slice cucumber, orange, shallots, chives, and dried chilis.
Arrange the scallops on your plate, and then sprinkle your sliced garnishes on top.
Spoon your lemon juice mixture over the scallops, and enjoy!
