Easy Grapefruit Vinaigrette

This super simple grapefruit vinaigrette is one of the best ways to showcase winter citrus. Pair the vinaigrette with bitter radicchio, sweet fennel, and rich avocado for a perfect winter salad.

For the vinaigrette: 

1/4 cup fresh grapefruit juice

1 tbsp grapefruit zest

1 tsp maple syrup (optional, if your grapefruit is particularly tart/bitter)

1 teaspoon Dijon mustard

1/4 to 1/3 cup Drizzle

Sea salt

Freshly ground black pepper

For the salad: 

1 fennel bulb

1 head radicchio (thinly sliced)

1 ripe avocado (thinly sliced)

Diced Fennel fronds

A few sections of grapefruit


Active Time: 5 minutes

Full Time: 5 minutes

Serves 4

In a large bowl, add zest, juice, mustard, salt, pepper, (and maple syrup, if using).


Drizzle in your Drizzle while whisking and continue to whisk until the dressing is emulsified.


Gently toss with salad ingredients.
