Fluffy Frizzle Pancakes

Ingredients

For the pancakes:

1½ cups all-purpose flour 

1 tbsp baking powder 

¼ tsp baking soda

½ tsp fine sea salt 

3 tbsp brown sugar 

1 large egg

¾ cup milk 

¼ cup Frizzle

½ tsp cinnamon 

Frizzle Spray

For the frizzle syrup 

¼ cup brown sugar

¼ cup white sugar 

¼ cup water 

1 tbsp Frizzle

½ tsp vanilla extract extract 

Pinch of salt

For the syrup: In a small saucepan, combine brown sugar, white sugar, and water. Heat over medium until the sugars dissolve, about 2-3 minutes.

Stir in Frizzle, vanilla, and a pinch of salt. Simmer gently until slightly thickened. Remove from heat and set aside.

For the pancakes: In a large bowl, whisk together flour, baking powder, baking soda, salt, and brown sugar.

In another bowl, whisk the egg, milk, Frizzle, and vanilla until well combined.

Pour wet into dry ingredients and mix gently until just combined. Let rest for 5 minutes to thicken slightly.

Heat a nonstick skillet over medium heat and grease lightly with Frizzle spray.

Scoop about ¼ cups of batter per pancake. Cook until bubbles form on the surface and the edges begin to set. Flip and cook 1-2 minutes until golden.

Stack them up and drizzle generously with warm Frizzle-syrup. Enjoy!
