Esquites
SHOUTOUT TAJÍN!!! This insanely tasty grilled corn salad (also known as esquites) will take your BBQ side game up a notch alll summer long.

Ingredients
1 pound of corn cut off the cob or frozen corn
2 tbsp of Kewpie Mayo
1/2 tbsp lime juice
1/2 white onion, finely diced
1/2 tsp Tajín seasoning
2 tbsp cilantro, finely chopped (reserve a couple whole leaves for garnish)
2 tbsp Cotija cheese
salt and pepper to taste
Instructions
Active Time: 10 minutes
Full Time: 20 minutes
Bring a pot of lightly salted water to boil. Add corn kernels, cover and cook for 5 minutes. Once done, remove from heat and drain.
Mix onion, mayo, Tajín, and lime juice into a large bowl. Season to taste with salt. Mix everything well using a fork.
Add the cooked corn kernels, chopped cilantro, and Cotija cheese. Fold to incorporate.
Transfer to serving bowls, garnish with additional Tajín, lime juice, and cilantro.
