
Frozen Caprese Daiquiri
Ingredients
2 oz light rum (preferably Probitas or another Barbadian rum)
1/2 oz Drizzle
3/4 lime juice
2 oz cane sugar-whey syrup*
200 g frozen tomato
Balsamic glaze
Fresh basil
*For the cane sugar-whey syrup, dissolve together equal parts (by weight) fine cane sugar and yogurt whey. Bottle and refrigerate until ready to use.

Prep a chilled 7 oz coupe glass with a swirl of balsamic glaze.
Combine 200 g of chopped and frozen tomato, one large basil leaf, 2 oz of light rum, 2 oz cane-whey syrup, 1/2 oz of Drizzle, and 3/4 oz of lime juice into a blender.
Blend on high until smooth.
Pour into a prepared coupe glass and garnish with Drizzle, basil, and fresh mozzarella pearls.
