Grilled Rhubarb Gimlet

Meet rhubarb pie's sassier, herbier, tarter cocktail cousin.

½ cup soft herbs, stemmed

7oz Drizzle

⅔ grilled rhubarb

⅔ fresh rhubarb

1¼ cup water

1 lemon, peeled & juiced

pinch of salt

2 oz Gin

1½ oz Rhubarb Cordial 


Active Time: 25 Minutes

Full Time: 30 Minutes

Serves 2

Herb Oil: remove herbs from the stem and combine with Drizzle. Blend on high until fully incorporated. 


Rhubarb Cordial: Brush rhubarb with Sizzle and grill on high heat. 1 minute per side. Remove from heat. Roughly chop grilled & fresh rhubarb into small pieces. 


Combine rhubarb, sugar, water, and 2-3 lemon peels. Blend on high until fully incorporated. Fine strain and bottle the cordial. 


Add all gin, rhubarb cordial, and a small pinch of salt to a cocktail shaker with ice, shake vigorously and fine strain into a coupe glass. 


Garnish with Herb Drizzle and enjoy!
