Sweet Pizettes with Mommenpop Blood Orange

Ingredients

For the dough: 

4 cups spelt flour 

½ teaspoon sea salt 

8 oz butter 

¼ cup warm water 

3 teaspoons dry yeast 

2 large eggs 

¼ cup cold water 

Blood Orange Syrup and Toppings:

6 oz Pecorino Romano 

5 oz local honey 

Sizzle for frying 

3 cups Mommenpop Blood Orange

1 cup sugar 

2 large or 4 small sage leaves

4 small fried sage leaves for garnish atop each pizzette

Before you begin, pour yourself a glass of Mommenpop Blood Orange on ice. Though it’s used as an ingredient in this recipe, it’s first and foremost a delightful drink to sip on - especially while you’re cooking. Citrusy, bright and refreshing!

For the dough: Add the yeast to the warm water and set aside somewhere warm.

In a large metal bowl, combine the flour and the salt. Grate the butter with a cheese grater into the flour mixture and toss.

Continue to do this until the blend has a sandy texture.

Form a well in the flour and add the eggs. Lightly beat the eggs into the mixture. Add the yeast and the cold water. Mix the dough until it just begins to come together.

Remove from the bowl and knead a few times. Divide into four even pieces, form them into discs by hand, and wrap in plastic. Let the dough rest for at least 15 minutes so that the gluten has time to relax.

For the pizettes: Roll out the dough until it is about 1/8” thick and cut into 4” circles. Stack with parchment sheets in between the discs of dough and keep cold until ready to fry.

Add ½” of Sizzle to a sauté pan over medium-high heat. Add the pizettes a few at a time, so as not to overcrowd the pan, and cook until golden brown on both sides. Remove from the pan and drain on paper towels.

For the Mommenpop Blood Orange Syrup: Add your 3 cups Mommenpop Blood Orange, sugar and sage leaves to a medium sauce-pot. Place on medium heat and reduce your liquid by two thirds or cook until 215 F. Set aside.

To Finish: Place the warm pizette onto a plate. Drizzle with local honey and Mommenpop Blood Orange syrup.

Shave Pecorino Romano over the top.

Add fried sage leaves to top (use Sizzle to get them crispy) and finish with Drizzle.
