Tabbouleh Salad

This SUPER FRESH farmer's market tabbouleh salad is the ultimate side dish for all your summer BBQs and cookouts!

Ingredients

1/3 cup Drizzle

3 tbsp lemon juice

1/4 cup mint, finely chopped

1 1/2 cups parsley, finely chopped

2 tomatoes, diced small

3 green onions (including the white part!)

1/2 cup fine #1 bulgur (smallest grind)

Optional:

1 tbsp sumac

1 tbsp dried mint

Prepare the bulgur. You can find the right bulgur at a mediterranean market or online! With #1 bulgur, you do not need to cook it. Simply soak it covered in hot water for 30 minutes. Soak 1 cup of bulgur with 2 cups of hot water. If there is any water left, drain it, but it should be fully absorbed. Also, check the packaging for specific cooking instructions. The bulgur should be added to the salad cold.

Prepare all other ingredients by dicing and chopping everything as finely and as perfectly as you can!! If the tomatoes are super juicy, you can remove the juicy insides so the tabbouleh doesn’t get too wet. Also, you can salt the tomatoes over a strainer to draw out some of the moisture before mixing in.

Add everything to a mixing bowl and season with salt, Drizzle, and lemon juice. Here you have the option to add in sumac and dried mint leaves! Let it sit and marinate for at least 30 minutes before serving. Serve cold!
