
THE SALAD (COCKTAIL!!)
The Salad is a crowd favorite at Tabla Catskills located in Tannersville, NY. This gimlet variation includes a local gin that has been “fat washed” with Drizzle imparting a velvety smooth texture and a wonderful olive oil aroma. Shaken with basil and lime, The Salad is the perfect refreshing summery cocktail.

Ingredients
FOR PREP:
750 ml Bottle of Your Favorite Gin
Bottle of Drizzle
FOR THE COCKTAIL
1.5 oz Graza Gin
5 Fresh Basil Leaves
.75 oz Fresh Lime Juice
.5 oz Simple Syrup
Instructions
Active Time: 5 mins.
Full Time: 24 hours and 5 mins
In a freezer safe container mix a 750ml bottle of gin with 8 oz of graza drizzle olive oil. (if you’d like to make a smaller batch, for every 1.5 oz of gin add .5 oz of olive oil.)
Let the gin and olive oil mixture sit at room temperature during the day, shaking to combine every so often. At the end of the day place the mixture in the freezer and allow to freeze overnight.
When fully frozen the olive oil will solidify and be separated from the gin, remove the solid oil layer and strain the remaining mixture with a cheesecloth.
Once your Graza gin is ready it’s time to make The Salad! In a shaker combine 1.5 oz of Graza gin, .75 oz of fresh lime juice, .5 oz of simple syrup, 5 basil leaves (*smash leaves between palms). Fill shaker with ice and shake for 15-20 seconds. Strain into a coupe or whatever glass you have handy.
Garnish with a basil leaf, lime wheel or a few drops of Graza drizzle oil and enjoy!
