Gazpacho Cocktail

Is it pronounced Gaz-pa-cho or Gath-pa-cho? Let's just agree to call it Grazapacho!

Ingredients

Gazpacho Mix

1 large heirloom tomato, roughly sliced

½ of a large cucumber, peeled and chopped 

½ of a yellow bell pepper, de-seeded and sliced 

1 tablespoon of your favorite vinegar (sherry, champagne, kombucha, etc) 

Zest of half a lemon 

¼ teaspoon sea salt 

Drizzle Vodka

1 part Drizzle 

4 parts Vodka

Boozy Gazpacho

1.5 oz Drizzle Vodka

½ oz Manzanilla Sherry 

2 oz Gazpacho Mix

Small pinch of salt 

Instructions

Active Time: 15 Minutes

Full Time: 12 Hours

Blend all heirloom tomato, cucumber, yellow bell pepper, vinegar, lemon zest, and sea salt on high until smooth. Fine strain and set aside.

Add 1 part Drizzle to 4 parts vodka and shake vigorously 2-3 times leaving 5 minutes in between shakes. Freeze overnight and fine strain through a coffee filter.

Add Gazpacho mix and Drizzle Vodka to a mixing glass, stir until chilled and diluted and strain into a rocks glass over large ice. Garnish with Drizzle and enjoy!
