Mulled Spice Apples with Olive Oil Sea-Salt Caramel
Half of the beauty of this recipe is the way it makes your house smell like cinnamon, nutmeg, vanilla!!

Ingredients
1 cup granulated sugar
6 Tablespoons unsalted butter
½ cup heavy cream
1 teaspoon flaky sea salt
¼ cup of Drizzle
3 apples (peeled)
4 cups of apple juice
2 cinnamon sticks
2-3 star anise
¼ teaspoon ground nutmeg
1 teaspoon vanilla extract
Apple skin (from peeling)
Vanilla ice cream (optional!)

Full Time: 1.5 Hours
In a medium pot, combine the apple juice, cinnamon sticks, nutmeg, star anise, vanilla, and apple skins. Bring to a gentle simmer.
Carefully lower the apples into the pot, cover, and simmer on low for about 20 minutes, turning them halfway through, until tender but still holding their shape.
Meanwhile, in a small pot over medium heat, add the sugar. Cook, stirring constantly with a wooden spoon. The sugar will clump, then melt into a thick, amber-colored liquid, keep stirring, to prevent burning
Once fully melted, reduce the heat to low and add the butter. Stir until completely incorporated.
Turn off the heat and slowly stream in the heavy cream, mixing until smooth. Follow with the Drizzle, then stir in the salt.
To serve, spoon the warm apples over vanilla ice cream and drizzle generously with the warm caramel.
