Potato Chip Latke Ice Cream Sandwich
Yup, you heard that right!

Ingredients
1 cup Crushed Potato Chips (~3-4 cups of potato chips)
1 Egg
½ cup Buttermilk
¼ cup Water
1 tsp All Purpose Flour
¼ tsp Baking Powder
½ tsp Kosher Salt
3-4 grinds Black pepper
2 Medium Gold Potatoes, peeled and grated
2 Tbsp Grated sweet onion

Instructions

Full Time: 1 Hour
Crush potato chips in a small bowl with the back of a measuring cup or your hands. You should get approximately 1 cup. Set aside.
Grate the peeled gold potatoes, gently squeezing out extra liquid with your hands. Set aside.
In a medium bowl, whisk together the egg, buttermilk, water, flour, baking powder, salt and a few grinds of pepper.
Add the grated potatoes, sweet onion, and 1 cup of crushed Potato Chips. Stir to combine. This batter will be loose and liquidy. Set aside for a minimum 30 minutes for the chips to rehydrate and the batter to thicken.
Heat Frizzle in a large skillet over medium heat.
Drop ¼ cup of batter into the hot oil, using a spatula to flatten to desired size. Cook latkes for 3- 4 minutes per side, or until crispy and golden brown.
Transfer latkes to a paper towel lined tray and sprinkle with maldon flaky salt.
Top 1 latke with a large scoop of vanilla ice cream, followed by your second latke. Garnish with FishWife Caviar, Drizzle, and serve immediately.
